Without a doubt, I’m a huge fan of veggies – roasted, grilled, stir-fried, and raw.  It doesn’t matter, I love them all.  For some people though, preparing cooked vegetables is a hassle and they much prefer salad.  I hear this from my clients on a regular basis. It’s not a problem though because raw veggies like leafy greens, carrots, onions, beets, mushrooms, and peppers are just as nutritious as cooked. And, vegetables are naturally low in calories and very helpful for weight management.

The problem is those bottled dressings that we pour on top. As tempting as bottled salad dressings are for the convenience, most are loaded with sugar, saturated fat, sodium, preservatives, and gums.  It’s almost a crime to top a bowl of crisp, fresh, nutritious salad or plate of cut-up raw veggies with one of those store-bought brands.

I fully appreciate just how difficult it can be to get even the most basic dinner on the table some nights.  So, preparing salad dressing from scratch can seem like way too much effort.  However, homemade salad dressing is very easy to make. With little effort, you can whip up a delicious dressing in no time.

Check out these recipes for a basic vinaigrette (with 3 variations) and an easy creamy ranch plus a few others.  You’re likely to find one of them in my fridge on any given day because, in addition to cooked veggies, I really enjoy salad.
